    Enhancing the availability of natural antioxidants in wheat-based food ingredients and food products through improved post-harvest treatments and processing conditions

    Wheat grain has significant antioxidant contents concentrated in the bran fraction, most of which may not be bioavailable in humans because they are not released from matrix materials during digestion. The present study developed solid-state enzymatic and yeast post-harvest treatments, and investigated the effects of these treatments and food processing on the extractable antioxidant properties of whole-wheat based food ingredients and food products. Antioxidant properties investigated in this study included scavenging capacities against cation ABTS radicals, peroxyl radicals (ORAC), hydroxyl radicals, and DPPH radicals, and total phenolic contents and phenolic acid compositions. The first part of this research developed and validated a high-throughput fluorometric hydroxyl radical scavenging capacity (HOSC) assay. The HOSC assay utilized a Fe(III)/H2O2 Fenton-like reaction to generate hydroxyl radicals, fluorescein as detector probe, trolox as an antioxidant standard, and area under the curve measurements to quantify scavenging capacity. The hydroxyl radical purity and potential solvent interference in the assay system were evaluated using electron spin resonance. The HOSC assay was found to have acceptable performance characteristics including linear range, accuracy, and reproducibility. The second part of this study investigated the potential of solid-state enzyme and yeast treatments to improve wheat bran antioxidant properties. Both enzyme and yeast treatments were capable of increasing available wheat bran antioxidant properties. Reaction parameters found to influence the effectiveness of these treatments to enhance wheat bran antioxidant properties included enzyme preparation and reaction moisture content for enzyme treatments, and yeast preparation along with dose and treatment time for yeast treatments. The final part of this research evaluated the effects of processing conditions including bran particle size, fermentation time, and baking conditions on the antioxidant properties of a whole-wheat pizza crust. Baking increased extractable antioxidant properties up to 82%. Fermentation time caused some significant increases, while bran particle size had no influence on extractable whole-wheat pizza crust antioxidant properties. This study suggests that post-harvest treatment of wheat bran and optimized processing conditions for whole-wheat food products are potential approaches for increasing their extractable antioxidant properties

    Continuity properties of measurable group cohomology

    A version of group cohomology for locally compact groups and Polish modules has previously been developed using a bar resolution restricted to measurable cochains. That theory was shown to enjoy analogs of most of the standard algebraic properties of group cohomology, but various analytic features of those cohomology groups were only partially understood. This paper re-examines some of those issues. At its heart is a simple dimension-shifting argument which enables one to `regularize' measurable cocycles, leading to some simplifications in the description of the cohomology groups. A range of consequences are then derived from this argument. First, we prove that for target modules that are Fr\'echet spaces, the cohomology groups agree with those defined using continuous cocycles, and hence they vanish in positive degrees when the acting group is compact. Using this, we then show that for Fr\'echet, discrete or toral modules the cohomology groups are continuous under forming inverse limits of compact base groups, and also under forming direct limits of discrete target modules. Lastly, these results together enable us to establish various circumstances under which the measurable-cochains cohomology groups coincide with others defined using sheaves on a semi-simplicial space associated to the underlying group, or sheaves on a classifying space for that group. We also prove in some cases that the natural quotient topologies on the measurable-cochains cohomology groups are Hausdorff.Comment: 52 pages. [Nov 22, 2011:] Major re-write with Calvin C.     A Comparison of Initial and Subsequent Follow-Up Strobovideolaryngoscopic Examinations in Singers.

    OBJECTIVES: Previous studies have identified abnormal findings in up to 86.1% of singers on initial screening strobovideolaryngoscopy (SVL) examinations. No studies have compared the prevalence of abnormalities in singers on their subsequent follow-up SVL. Our study evaluates the frequency of these findings in both the initial and subsequent examinations. METHODS: Retrospective charts and SVL reports were reviewed on students from an opera conservatory from 1993 to 2014. All students had initial screening SVL, but only students who later returned with acute voice complaints were included in the study (n = 51, 137 follow-up visits). Normal SVL was defined as an examination without structural or functional abnormalities and reflux finding score ≤7. Data were analyzed using the chi-square test. RESULTS: For initial examinations, 90.2% (including reflux) and 88.2% (excluding reflux) were abnormal. In follow-up examinations, 94.9% (including reflux) and 94.2% (excluding reflux) had abnormal findings, which included muscle tension dysphonia (40.1%), vocal fold (VF) masses (unilateral 48.9%, bilateral 30.7%), vascular abnormalities (unilateral 27.0%, bilateral 5.8%), sulcus (unilateral 17.5%, bilateral 5.1%), VF hypomobility (unilateral 36.3%, bilateral 5.9%), phase (30.6%) and amplitude (44.8%) asymmetries, and glottic insufficiency (49.3%). Follow-up examinations revealed a significant increase in laryngopharyngeal reflux (χ(2) = 7.043; P \u3c 0.05). CONCLUSIONS: We found a higher prevalence of abnormal findings compared with previous studies, which we attributed to a more inclusive definition of abnormal pathologies, improvements in SVL technology, and possibly increased experience with SVL interpretation. This high prevalence of abnormal findings in asymptomatic singers further supports the importance of baseline examinations
